Terminology, not paraphrase
Biology mark schemes award specific words. A student who understands osmosis and writes about "water moving to where there is less water" does not get the mark. We work on the language deliberately.
Content made learnable
The volume is the real problem. We structure topics into retrievable pieces and use active recall rather than re-reading, which is the difference between having covered the content and being able to produce it.
The maths and statistics
